I got this recipe off Facebook. It originally had some ingredients in it I do not use, so I made it my own and made it healthier by adding protein powder. I also made the batch smaller. So here goes my version.
Coconut Protein Ice cream Bars
1/2 cup fresh ground nut butter (I used almond, cashew and peanut mixed)
3/4 cup of coconut milk (unsweetened)- use the canned version (real thick and creamy)
1 tbs. vanilla
1/4 cup shredded coconut (unsweetened)
1/4 cup cacao nibs or chopped up bakers chocolate (unsweetened)
1 scoop chocolate protein powder ( I use powder only sweetened with stevia)
I mixed this all together in a bowl until the nut butter was blended in.
Pour into 8 popsicle molds.
Freeze and wow– enjoy!!!
